WHere is a home-style interpretation of a drink featured on a new drinks list. Designed as a party-sized pre-mixed which is bursting full of tastes associated with Christmas time, rendering it excellent for hosting a celebration. Reserve the remaining syrup to use in breakfast cocktails, desserts, or to mix another batch of the drink.
Bikini Recipe
Serves 10 people
For the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Place every items inside a pan, bring to a light boil, agitating until the sugar dissolves. Then, turn off the heat allowing it to cool completely. Pour to a sealable bottle, close it keeping it in the fridge, where it will keep for about a month.
Preparing the Cocktail Base: Pour all the liquids in a large bottle, leave to sit for 60 minutes, then strain best through cheesecloth, so it's perfectly clear.
For serving: Measure 85ml from the premix to a mixing glass containing ice, gently stirring carefully for a minute to cool it down. Pour to a frosted cocktail glass or equivalent, decorate with a few cranberries and finish with a quick spritz with the mandarin essence over the top.
